There are many foodsI don’t miss since having gastric bypass surgery. There have been many foods I have been able to walk away from and never look back.
But there are a few things I do miss. I miss having a big bowl of cold cereal. I miss being able to eat Jello. (I know, can there be anything more typical Utahan to say than I miss Jello?)–Wait, did I just call myself a ‘Utahan’???
Geez! But before I moved to Utah, Jello salads (sans green stuff with carrots) were a staple on every holiday table, now I can barely eat a bite before I pay the consequences. I also miss fried chicken.
Luckily (or not so, if my doctor is reading this), I can OCCASIONALLY enjoy a small amount of fried chicken. I will usually eat a small piece like a wing or if I am really ambitious, a drumstick. Nothing makes me feel more like a little kid than gnawing on a fried drummer.
For the most part, my daughter follows my diet, but I do give her more carbs than I eat since she’s a growing girl and very active. But she gets the same lean protein, and as many veggies as I can get into her. But she is no stranger to the crispy strip or chicken nugget. Sometimes dinner is on the run or needs to be convenient. Tyson Crispy Chicken Strips have been great to have on hand during those times I need dinner fast.
I accepted a challenge issued by The Daily Meal and Tyson Chicken to make a creative dinner using Tyson Crispy Chicken Strips. Nothing gets me more excited in the kitchen than a challenge.
But I truly owe this recipe to my daughter. Since it’s just she and I, the poor kid has to listen to me talk about recipes with her when I’m certain she much rather be watching My Little Pony. But when I said I was going to make chicken, she asked me if I was going to make the orange (as in color, not flavor) Chinese chicken like we had the other night. I looked at her, smiled, kissed her, and hugged her until she cried out “mooommmmm, stop, let me go”. Perks of being mom, squeezing your kid until they squeal!
Off to the kitchen I went to make my own version of Honey Sesame Chicken. Thanks Kiddo!
Oh, I should tell you, this was done before the rice cooker chimed that the rice was ready…truly a meal under 30 minutes.

Quick Honey Sesame Chicken is a super quick, Asian inspired meal that the whole family will love and can be on the table in less than 30 minutes.
Ingredients
- 2lbsTyson Crispy Chicken Strips(about 10 strips)
- 1/2cuphoney
- 1/2cupketchup
- 1/4cupsoy sauce
- 1/4cupbrown sugar
- 1/4tspblack pepper
- 1/4cuprice wine vinegar
- 2gloves garlic; minced/grated
- 3tbspsesame oil; divided 2/1
- 1tbspsesame seeds; plus more for garnish
- 4green onions; chopped
Instructions
Allow the Tyson Crispy Chicken Strips to thaw enough to cut or microwave for about 90 seconds.
Cut the chicken strips into cubes; set aside.
In a bowl, whisk together the honey, ketchup, soy sauce, brown sugar, black pepper, rice wine vinegar, and garlic; set aside
In a large pan or wok, heat 2 tbsp of sesame oil.
Once hot, add the chicken, quickly flash frying it, making sure the oil has coated each piece. The chicken should have a slight 'wet' appearance.
Add the remaining tablespoon of sesame oil, mix well.
Pour in the sauce and bring to a low simmer.
Add the tablespoon of sesame seeds and half of the chopped green onions, mix well.
Once the chicken is warmed through, serve over rice, if desired.
Garnish with the remaining green onions and sprinkle with sesame seeds.
