This healthier Skillet Lasagna has been a long time favorite on The Recipe Rebel, and it is finally getting an update!

As much as we love this Easy Lasagna Recipe (with oven ready noodles that save us a step!) and this Crockpot Lasagna (made with 6 ingredients!), this skillet lasagna still has a place in our hearts because of how much good stuff is in it!

It is a family and reader favorite around here for so many reasons!

  • It’s made in one pot, which means easy clean up!
  • It’s made healthier, with lots of veggies, ground turkey, and a homemade tomato sauce
  • It is cozy and comforting — I love getting my carbs, my cheese and my veggies all in one dish!
  • It’s made in 30 minutes, so it is totally doable any night of the week!

Ingredients and Substitutions for this recipe:

  • Ground turkey: you can substitute ground chicken, ground pork, or lean ground beef. You can even leave it out entirely, and just add in extra veggies!
  • Vegetables: I’ve used vegetables we enjoy and ones that pair well with these Italian flavors. You can add more, leave them out, or substitute for others your family enjoys! Mushrooms and spinach would be more great additions!
  • Tomato sauce: I use plain tomato sauce (no salt, no sugar, no seasonings) or crushed tomatoes, but you can always use a jar of tomato pasta sauce (with salt and seasonings) if that’s all you have! Keep in mind you may want to reduce the salt and seasonings if you do.
  • Lasagna noodles: you can substitute for oven-ready lasagna noodles, just keep in mind that your lasagna may be a touch saucier, as they are not supposed to absorb as much liquid. It will still be totally delicious and definitely not soup, I promise 🙂
  • Cheese: you can use any cheese you want! You can swap it for a low fat variety, or add in some Parmesan for that sharp and tangy flavor we all love.

Me and pasta and cheese? I’m not sure when the love affair began but it’s not likely to end anytime soon. So I sneak in all the veggies I can to beef up that nutritional value!

Hi Ashley, I only have 28 oz cans of crushed tomatoes, can I use the whole can and less broth? Or would it be better to just measure the tomatoes to 14 oz and continue with the recipe…

    Thank you kindly,
    G. Fulton

Loved this recipe. I thought it looked a bit soupy at the beginning but it ended up thickening and tasting delicious. I used ground beef and a pasta sauce. 5 Stars ⭐️

I loved this recipe!! I used Italian sausage, bowite pasta, and beef broth. I also gave it a kick with a can of roasted tomatoes and a little bit of tomato paste.
Thank you so much. I am taking leftovers for lunch tomorrow

This was delicious! I made mine in the Instant Pot because I wasn’t able to to watch a pan on the stove. It turned out really well, but a bit saucy. The next day, the noodles soaked it all in and we enjoyed it even more. I also subbed finely crumbled cauliflower for the zucchini and no one knew any better!

You will probably love this one… Im a single guy trying to eat well w/o a lot of cooking experience. I was making this right ‘by the book’ but after I had added the crushed tomatoes to the skillet it became obvious that everything was not going to fit. Then I noticed my can of tomatoes was 28 oz. instead of 14. LOL. I transferred everything to a large pot and continued, adding the shredded cheese at the end. It was more like lasagna stew, but it was still delicious, just one more pot to clean. And I have lots of leftovers, it wont be wasted.

Easy and delicious! A lifesaver as were in the middle of moving and had everything on hand! I did add some dark brown sugar (around 1/2-1 Tbsp) so the sauce would be be so acidic, but that’s just personal preference. Thank you so much! Everyone loved it and I loved only having one pit to clean!!

      Oh my goodness, typos.
      *We’re (moving)
      *wouldn’t (be so acidic)
      *Pot (not pit)
I should really proofread before posting. 🤪

Thank you Ashley for this very easy delicious recipe.
I love to cook, but I hate cleaning up pans and pots afterward, this was easy.
And also, many thanks for adding the measurements in the Metric system (I can manage with ponds and quarts and cans, lived for 15 years in MN) makes it so much easier for me.

FAQs

Is it better to let lasagna sit before cooking? ›

Let the lasagna rest before cooking it

For cooking patience is an excellent ally, so when you have finished composing your lasagna, let it rest for about 40 minutes before baking it; in this way the pasta will absorb all the flavors of the condiment and the cooking will be more homogeneous and the taste richer.

How to make brown on top of lasagne? ›

Cover the dish with foil and bake for 20 mins. Remove the foil and bake for another 30 mins or until cooked through, the crispy edges have browned and the top is bubbly and golden. Let the lasagne firm up for 15 - 20 mins before cutting and serving.

Do you spray the bottom of a pan when making lasagna? ›

For the best results, we offer the following tips for assembling your lasagne: Begin with a 13 x 9 x 3-inches deep baking pan, sprayed with nonstick cooking spray. Spread 1 cup of sauce on the bottom of the baking pan and begin layering.

How many layers should a lasagna have? ›

Then repeat the layers. Top the last layer of your lasagna with sauce and cheese. You can also alternate layers of sauce and ricotta cheese. Most lasagna recipes have two to three layers.

Should I put cheese on top of my lasagna? ›

Assembly. Once you've layered your lasagna, you need to make sure you last layers (or top layers) finish with pasta > meat sauce > white sauce > mozzarella cheese. Yeah, that order results in a golden, crunchy and cheesy top with a layer of juicy meat sauce underneath.

How do you keep lasagna from getting hard on top? ›

And finally, to avoid your lasagne drying out, cover the top with foil while it's baking, then remove it halfway through so that the top can brown nicely.

Why does my lasagna go hard? ›

As the lasagna bakes, the cheese on top starts to melt and spread out, creating a layer that is in direct contact with the hot oven air. This exposure to heat causes the cheese to brown and crisp up, forming a crunchy texture.

How long should lasagna sit out before baking? ›

If using glass or Pyrex, I'd let it sit out for a good 30 minutes, assuming the room is cool and not hot. And then I'd start it in an un-preheated oven, just to be safe.

How long should lasagna sit before baking? ›

The lasagna needs at least 5 hours to chill and let the sauce soften the noodles, but you can definitely make it the night before (even 3 days before) and bake it when you need it. Want your own freezer lasagna? Wrap it up in foil once you assemble it, no need to bake it beforehand.

How long should you let lasagna sit before cutting it? ›

Remove the lasagna from the oven and allow the bubbling layers to cool for at least 15 minutes. Not only does this prevent diners from burning their mouths, but it can also make it easier to slice the lasagna into pieces.

How long can lasagna sit out before cooking? ›

To be safe, it's best to discard any lasagna that has been left out for more than 2 hours.
